01 tt 1.8 p1296

Hi everyone, I'm new here (and new to german cars) and just bought a TT 1.8 (it's the smaller motor) and have had issue after issue with it and finally thought I had it right and now I've got a new issue. I've researched endlessly on this code and found some great help in this forum, but wanted to ask a question because I'm not super technical on autos. I found some help that the P1296 code is most likely the coolant temperature sensor, but could be the thermostat. Our local VW repair shop wants $120 to diagnose the issue, and I've pulled the codes and some folks were saying that if the temperature was within a certain range it was the sensor, but within another range it was the thermostat but I'm not sure how to tell. I've posted the readouts from the code scanner and just wondered if anyone would be able to help. If this helps too, the ESP light came on tonight before the check engine light (I've cleared this code once but it came back) and when I shut the car off and turned it back on the ESP light stayed off, but about 10 minutes later the check engine light came on. The temperature gauge only moves barely above the low point, and the MPG gauge has been acting up. I just got the timing belt replaced at the VW shop but they did not replace the thermostat, just the water pump and timing belt and put all new coolant in it. I'm just hoping this is a job I can do myself and not have to fork over a ton more money on this "fun" car I bought to joyride in! I'm sorry if I multiposted this but I appreciate any and all help.
